Sweet Potato Dream Pudding

I was thinking I should steam some sweet potatoes for the kids, when I started to feel a bit defiant! “I’m not steaming anything!” I said to myself. I pulled out the grater, and started to…

…grate a big, fat sweet potato. Then, I put the grated sweet potato in my food processor. After which point, I added:

1 dash of vanilla
a sprinkle of cinnamon
2 Tablespoons coconut butter
1 big handful of raisins (or dates, if that’s what you have).

Then I whipped and whizzed the ingredients together in my super Blendtec blender. It make a yummy, creamy sweet potato pudding and my daughter just loooved it! I played around with it and did layers of sweet potato pudding and sliced bananas. Then I decorated the top with raspberries, just for fun. The kids ate quite a lot of it and it was requested the next morning as a healthy way to start the day before school! Enjoy

“Anything Goes Into the Food Processor With Bananas” Cookies

I don’t know how this happened… perhaps it was a moment of divine intervention, but these cookies were a huge hit. My daughter, Mika, said,

“Mom, these cookies were fabulous. I took one bite, and then as the tastes stayed in my mouth after I swallowed, I just said to myself, ‘Oooooh yeah! Gimme another one of those!’” Here they are:

Ingredients:

I started out with about 4 ripe bananas, and whipped them up in the food processor. I added:

a splash of vanilla
a few pinches of cinnamon
½ cup- 1 cup of shredded coconut.
3 Tablespoons of ground flaxseed
a handful of sunflower seeds

Then I found a bag of about 3 cups oat flakes, and rice flakes, etc. I dumped these in, mixed them all up in a big bowl and then laid them out on the dehydrator trays and “baked” them at about 105 degrees overnight. Throw in a bit of Christmas spiceAhhh… Christmas baking! Just like the good ol’ days.

Treats The Whole Family Will Love

Easy Almost Oatmeal Cookies

buckwheatIngredients:
4 cups soaked, lightly sprouted buckwheat groats
3-4 ripe bananas
loads of ripe dates
any other dried fruit or nuts and seeds to mix things up a bit.
I also used an apple or two or three.

Don’t you just looove my precision with recipes! ;-)
Directions:

I took about 4 cups of buckwheat and soaked it. (They say you only need to soak it about 45 minutes, but I left mine in a lot longer.) Then I let it sprout a bit by draining the water and rinsing it once or twice a day. I just left it in a big colander on the counter.

After a day or two, it was ready enough for me. So, I dumped half of it in the food processor with about 3 bananas and a bunch of dates.

I processed half the buckwheat with the bananas and dates until it was a yummy, doughy paste. Then I stuck my spoon in it and nibbled. Yummm…

The kids loved the doughy stuff and would have just eaten it like that. I mixed it with the remainder of the buckwheat sprouts and made a cookie dough batter. Then I made little tablespoon-sized blobs on the dehydrator tray and turned it on for the night.

You can let the kids decorate them with raisins and coconut sprinkles, too! Dehydrate overnight and PRESTO! COOKIES!

Another recipe from Ildiko, our Community Coordinator, was used at a taste-testing this week in Montreal, and it was the hit at our first BIG potluck in Montreal. Here’s the recipes for:

Chocolate Truffles!No-Chocolate Chocolate Truffles

Ingredients:
1 cup pumpkin seeds, soaked overnight and drained
1 cup sunflower seeds, soaked overnight and drained
1/2 cup carob powder
3 Tablespoons of honey or date paste

Directions:

Put soaked seeds in a food processor and grind them.

Add carob powder powder and process again.

Add honey and process one more time until you get a sticky ball of dough.

Roll them into little truffle-sized treats and sprinkle with extra carob powder. You can also add different essential oils and spices to zing ‘em up a bit, but this is the basic recipe and it’s a winner!!
